Stuffed Green Chile Creme Cheese Chicken Dinner

Wow what a long title. But I wasn't sure what else to call it. haha So before I had Payton Chris had set a goal to lose 10 lbs. Well he did it! He planned to keep working at it but I think with having a new baby, moving, studying for the DAT, taking the DAT and now being back in school instead of losing more he's gained back 5.

Anyway so we are back on track he is eating better and he is hitting the gym 3-4 times a week. I think he would like to go more but he is super busy with school and work and the familia that he can only go that many times. It's a start. So he said to me Scarlet I really need you to commit to making a dinner every night so I'm not scrounging around the kitchen for whatever food I can eat and then I just pick at stuff the rest of the night. So I agreed wanting to be helpful and hoping to improve my skills and expand my options. I love love love making desserts...when I get together with my mom and sisters we ALWAYS have a dessert. haha I struggle with dinner mostly because I don't have many recipes and I have a hard time just making something up.

Last week I made one dinner and then we went out of town and I made one dinner in Texas. We got back and Monday we bar b qued with family so Tuesday I made Chris' chilli and last night I made this Stuffed chicken dinner. thingy. haha After I had Payton my visiting teacher brought us this dinner...stuffed chicken breasts but I didn't know how she made it or what she used. So i went through and started researching and talking to friends and family about ideas. I took some pictures of the process and the end product. We liked it! We both agreed though that it needed something more...the chicken needed to be marinaded or we needed more spices. It was also an experiment dealing with the bacon. haha. Here we go...

1. I bought a can of Green Chile Peppers and barely used a 1/4 of the can...


2. I then added them to just over half a brick of creme cheese and mixed them together.


3. I also bought fresh chicken breasts...not frozen is what I mean by fresh...I didn't go out and chop up a brand new chicken... I cut off some stuff I didn't want and then I went in and cut a plus sign on top of the chicken breast and then kind of cut out some chicken from the inside so I could put in the creme cheese mixture.


4. Nice yummy bacon...thawed or just from the fridge however you do bacon but you want it to be soft.


5. Here is the uncooked product...creme cheese filling shoved into the chicken.


6. This is where we had a problem. I originally wrapped bacon around the chicken but we were worried they would cook too fast. So we took off the bacon and let the chicken cook most of the way and then we just laid bacon on the top...well then the bacon wasn't cooking fast enough and we didn't want to dry out the chicken so we took everything out and just cooked the bacon in a pan on the stove. Now that it's all said and done we both agreed we should have just let it all cook at the same time. haha I set the oven to 350 and it probably went for over 30 min but I would just keep checking the chicken till there was no pink.


7. The final product!!! IT would have looked much better if we had cooked the bacon wrapped around the chicken from the beginning. We had it with corn and had eaten our salad before because we were so hungry. 


 8. ENJOY!!! We really liked it but like I said earlier the chicken could have used more flavoring...we could have marinated it or something. Or even some more spices in the creme cheese mix.


For it being a first time experiment type dish we really liked it and it was super filling...neither of us could actually finish the whole thing. YUMMO!!! Definitely making it again!!!

  3. I do something similar but put a can of Cream Of.....soup on the bottom of the dish (whichever kind you want; cream of chicken, celery, mushroom). To help add a lot of flavoring I put about 1/4 - 1/2 envelope of Ranch Dressing mix and Italian Dressing mix in with the cream cheese then pour some on top of the chicken as well. I also add on top and inside with the cream cheese some garlic powder and additional seasonings (usually Creole seasoning or Spike seasoning). To make it even easier, I don't even mix the seasonings with the cream cheese, I just cut off a chunck of cream cheese from the block, slide it in the chicken then sprinkle the seasonings inside and on top. Delish! What a great goal for the both of you to have and accoplish making these dinners.
