Chicken Salad Croissant Sandwiches


These are definitely a favorite. I am blogging about my dinners now because it gives me something to blog about and gets me excited to actually make dinner every night. So I missed the first two dinners...one is Chris' yummy Chilli which we love and the other was just Beef Tacos. So for our fourth dinner I made Chicken Salad Croissant Sandwiches. YUMMO! Most of these dishes I've made have been pretty easy but I like it that way. It makes things easier for me as a momma of two! I don't like that there is Mayo in it because it's fattening but it makes it tasty. haha


1. So for the two of us I used two cans of shredded chicken breasts and Mayo.



2. I combine the two in a bowl and use a fork to shred up the chicken til it looks like this.

3. Then I added a good amount of salt and pepper.


 4. I chopped up grapes. My mom sometimes does green and red grapes but we rarely eat grapes or eat enough to go through two bags of grapes so I chose red grapes.


5. I also chopped up celery into nice small pieces. Fun having this girl around to giggle at while I cook.


6. I add the grapes and celery into the bowl of shredded chicken and mayo. 

 7. Chris and I tried just using regular whole wheat bread and something just wasn't right. Then we went and bought croissants...HEAVENLY! Probably the other fattening part of the dish...they're perfect.

 8. Put the Chicken Salad you just made and put it into the Croissant. ENJOY!!!


I went to pull out the leftovers from the fridge for some lunch. Sadly it was frozen! GRRRR. I was totally looking forward to leftovers. So trying to save it I kept it in the container and set it in a container of hot water to let it defrost. It actually wasn't too bad. But not nearly as good as it was last night. 

*Note to self: Don't stick want to be leftovers in the back of the fridge*
